Super Simple Refrigerator Pickles

Refrigerator Pickles are as easy as 1, 2, 3… or something like that.


Ingredients:

3 pickling Cucumbers, each about 4 inches in length, sliced evenly (removing a small slice off each end will keep them crunchier  

¼ Vidalia onions, sliced  

3-5 sprigs fresh dill weed 

½ cup white wine or apple cider vinegar 

½ cup water

2 cloves garlic, smashed 

1 ½ teaspoons pickling salt, or kosher salt

¼ teaspoon granulated sugar (optional)  

¼ teaspoon whole black peppercorns

¼ teaspoon whole yellow mustard seeds 

Instructions

Pack a pint-sized jar with sliced cucumbers, onion slices, dill sprigs,salt, garlic, and spices. Leave a ½ inch of space at the top of the jar for liquid. 

In a measuring cup add vinegar and water mix in sugar if desired. Once well mixed, pour over the jar of items so everything is covered with liquid. You may have extra if it doesn't fill the jar mix with more water and vinegar and top off. Close the lid tightly and turn over a few times to mix everything then refrigerate. Ready to crunch as half sours in a few hours and full sours after 24 hours!
