Pomegranate Ginger Bourbon Cocktail

 
 

Ingredients:    (Makes 2 Cocktails)

6 ounces pomegranate juice

4 ounces bourbon

4 dashes bitters

1/2 lime squeezed

2 oz ginger simple syrup* (see below)

Ginger Simple Syrup:

½ cup sugar

½ cup water

1 tablespoon fresh grated ginger root - about 1 inch


Instructions: 

*Make the simple syrup. In a small saucepan, combine the sugar, water, and grated ginger. Bring to a simmer. Remove from heat and let cool. This can be done up to a week ahead and stored in refrigerator. 

Make the cocktail. In a shaker, fill 1/2 full with ice. Add the pomegranate juice, bourbon, ginger syrup, bitters, and squeeze 1/2 of a lime into shaker.

Vigorously shake and strain into glass filled with crushed ice and pomegranate arils. Garnish with a sprig of rosemary and a dried orange. Alternately you can rim the glass with sugar and garnish with with a lime wedge.
